How to Make Pour Over Coffee at Home

What Is Pour Over Coffee?
Pour-over coffee is a manual filter-brewing method where hot water passes through ground coffee and a paper filter. It is popular because it gives the brewer control over several variables.
You can make excellent pour-over coffee with relatively simple equipment.
What You Need
At minimum, you need a pour-over brewer, paper filter, freshly roasted coffee, hot water and a cup or server. A grinder and digital scale make the process much easier to repeat.
A gooseneck kettle can improve pouring control, but it is not the only way to begin.
A Simple Starting Recipe
Try 15 grams of coffee with around 240 grams of water as a starting point. Use a medium-fine grind and water that is hot but not aggressively boiling.
Rinse the paper filter, add coffee, gently saturate the grounds, allow a short bloom, then continue pouring slowly and evenly until you reach your target water weight.
Why the Bloom Matters
Fresh coffee can release trapped carbon dioxide when it first meets water. The initial wetting stage, commonly called the bloom, gives the grounds time to release that gas and become evenly saturated.
The exact bloom time can vary with the coffee and roast.
Troubleshooting
If the coffee tastes sour and thin, try a slightly finer grind or longer extraction. If it tastes harsh and dry, try a slightly coarser grind or shorter extraction.
If the flow is extremely slow, the grind may be too fine or the filter may be clogged by very fine particles.
Make It Yours
Once you have a consistent recipe, change one variable at a time. Try a different coffee, then a different grind, then a different ratio.
